Champagne J. Lassalle
Founded by Jules Lassalle in 1942 in Chigny-les-Roses, J. Lassalle is a small, family-run grower house that has been led exclusively by women for the past three decades, currently by Angéline Templier, following her mother Chantal. The domaine farms around 11.5–16 hectares of entirely Premier Cru vineyards across Chigny-les-Roses, Ludes, Montbré, Puisieulx, Rilly-la-Montagne, Sermiers and Villers-Allerand. Lassalle still uses the original wooden basket press installed by Jules over 70 years ago, vinifies each plot separately, and, unusually for Champagne, allows its wines to complete full malolactic fermentation, in the manner of fine white Burgundy. Every bottle is hand-riddled and cuvées are aged extensively before release.
