The fruit was whole-bunch pressed to preserve purity, with the base wine undergoing a controlled fermentation to enhance aromatic complexity. Following malolactic fermentation, the wine was aged on lees for over five years in the bottle, a hallmark of Méthode Traditionnelle. This extended lees aging has imparted depth, creamy texture, and subtle autolytic character to the wine, making it a standout example of Australian sparkling excellence.
