Equipo Navazos 'La Bota 85' Fino Amontillado is a wine that tells a story of time, tradition, and transformation. Made from 100% Pedro Ximénez grapes in Montilla-Moriles, this rare style bridges the gap between Fino and Amontillado, two of Spain’s most distinctive sherry types.
It starts its journey as a Fino, aging under a delicate layer of yeast called flor, which protects the wine from oxygen and gives it a fresh, briny character with hints of almond and citrus. Over time, as the flor fades, the wine begins to gently oxidise, deepening in colour and developing the richer, nuttier notes of an Amontillado. This natural evolution results in a wine that is crisp yet complex, dry yet full of flavour—the best of both worlds.
With 12 to 14 years of careful aging, this is an exceptional example of Andalusia’s winemaking heritage. It’s a wine for those who love depth, character, and something a little different.
Appearance: Warm golden amber, with a hint of age in its glow.
Nose: Aromas of toasted almonds, dried citrus peel, sea air, and aged oak, with a subtle yeasty note from its early years under flor.
Palate: Dry, savoury, and layered. Flavours of green olives, roasted nuts, chamomile, and fresh herbs unfold, balanced by a streak of minerality. The finish is long and refreshing, with just a touch of spice.
