McHenry Hohnen 'Hazel’s Vineyard' Cabernet Sauvignon 2019
From McHenry Hohnen’s most southerly and biodynamically farmed single vineyard in Margaret River, the 2019 'Hazel’s Vineyard' Cabernet Sauvignon is built for aging. A cool-climate vintage, hand picked and fermented with native yeasts in open fermenters, gentle extraction over three weeks, before ageing in French oak barrels, 30% of which were new, for 16 months. The wine is unfined and unfiltered. This Cabernet combines structure and detail with vineyard personality. Tannins are firm yet silky. The wine is built for long-term cellaring and reveals depth when mature.
Appearance
Deep garnet with bright crimson highlights and weighty clarity.
Nose
Layers of blackcurrant, graphite, earth and cedar, with violet and sage complexity.
Palate
Rich cassis, mulberry and dark cocoa dust. Taut acidity, graphite texture and fine-grained tannins drive a composed and savoury finish.
