‘Les Séchets’ is an exceptional Premier Cru vineyard within Vaillons, known for its higher elevation and wind exposure, which contribute to a leaner, more structured expression of Chablis. The thin, rocky Kimmeridgian soils here force the vines to struggle, resulting in concentrated fruit and a taut mineral backbone.
For this cuvée, Piuze works with old vines from a single parcel, hand-harvesting the fruit at optimal ripeness. Fermentation occurs with indigenous yeasts, followed by aging in neutral barrels, ensuring that the wine maintains its laser-sharp acidity and precise, flinty minerality.
Compared to other Vaillons Premier Cru sites, Les Séchets produces more linear, citrus-driven wines, with exceptional aging potential and a racy, saline finish.
Appearance: Bright lemon-gold with shimmering clarity.
Nose: Tightly wound aromas of lemon zest, green apple, wet stone, and crushed oyster shell.
Palate: Intense and linear, with a core of citrus oil, tart nectarine, and a briny, iodine-laced minerality. The finish is crisp, mouthwatering, and persistent.
